I would personally recommend booting ESXi from SD, although you'd want to consider configuring a persistent location for syslog.
As for the local SSD cache, I have never used it but would suggest doing some performance testing with your production loads. If you find that your VM's are swapping or getting regular ballooning then local SSD could help.
